Asparagus in mint garlic sause



This is something I would like to start  my Green Theme with.
This salad reminds me of spring, mountains, morning freshness in the air.
It is a wonderful garnish for a steak or grilled fish.

INGREDIENTS
Asparagus 1 bunch 
Olive Oil 4 table spoons
Lemon 1
Garlic 2 cloves
Dry mint 1 tea spoon
Dry or fresh Tarragon 1 tea spoon

And a snow flower for presentation

Start with trimming/bending the ends of the stalks.




Place the asparagus into salted boiling water.
Simmer from 4 to 7 minutes depending on how thick the stalks are.





Pour contents into a strainer


For the sauce
Squeeze 1 lemon and mix the juice with 4 full table spoons of olive oil, add dry mint  and tarragon. Chop the garlic into  tiny rings and add into the juice. The chopped garlic will bring   crunchiness to the dish



The sauce will have a nice bright yellow color and will add the necessary acidity, which makes this perfect as side dish for fish  



Pour the juice over the asparagus, place in a form to make a tower



To give a final look I have added a snow flower which my daughter picked from the park for me.
