I have decided to start my posts by going back to my roots and using some recipes from the book which is called the Secrets of Armenian Culinary
of course I couldn't resist and make some amendments. This is an easy delicious dish which is light and healthy. I tried adding it a contemporary presentation touch and serve it with asparagus seasoned with mint sauce (please see my next post)
Ingredients
Poussin
Butter
3 tomatoes
1 pepper (red or green)
1 onion
2 cloves of Garlic
Red ground pepper /paprika
4 Black peppercorns
4 Cinnamon
4 Cloves (I added ground clove)
Open out the poussin and flatten it out,
Season it with salt, black pepper and paprika.
Add some butter in the saucepan and layer of tomatoes cut down in half.
Place the poussin over the tomatoes, add one more layer of tomatoes with a layer of onions cut in rings add green pepper (the original recipe) or red (whole), season again with salt, cinnamon, add in 4 cloves and 4 black peppercorns and 2 garlic cloves
Simmer the poussin till its cooked about 40 minutes.
Add dill before serving.
Serving add dill into half tomato decorate with green olives and red pepper, add the 1-2 spoons of sauce from the saucepan.
