Trout with tarragon and tomatoes

This is a very quick, 5 minutes dish to prepare


(Easy, quick, delicious)


I am dedicating this post to working mums, because they are awesome! Working mums -you are absolute heroes and not only  with one off act of bravery but continuous daily heroism in the mornings, afternoons and in the evenings, irrespective whether it is half or even worse full day work and regardless if your kid/s are 3, 8 or 19 years old. Working mums - wherever you are - You rock! 


There are some days when it is particularly tough and extra hard.
At the end of the working day you feel like you have almost completed a 4km. free style swimming workout. It gets harder to make the strokes, you lose count of the laps, it's harder to breathe and exhale, you feel your body muscles are stretching from your toes up to your neck and you regret you didn't drink enough water not to feel so intoxicated, your brain turns off. But you know you are so close to the finish line - just few last laps and you'll be able to swim down, chilling out with a smooth relaxing breaststroke and then... suddenly you realize that you have only completed 2 km. and still have 2 more km. to go for, i.e. (You still have to commute home, pack the lunch for the next day school trip, bake those bloody cupcakes for the cake sale, check the homework and try to cook healthy food for dinner or for the next day.)


Rule 1. Turn the music on

Rule 3. Trout with tarragon

You just need 4 ingredients: trout, tarragon and tomatoes, butter (salt).



 Put the tomatoes first in a heavy cast iron pan


(if you don't have it put in any pan that you've got)



trout on top, decorate with a nice bunch of tarragon and don't forget  to generously rub salt over the trout, put a slice of butter inside the fish.





Add water, but just so it covers the fish. Cover with lid. As soon as it boils, cook till it is ready on a very low heat.  
Tip: fish eyes should pop out


If there is a child who is not fond of fish s/he may like  decorating the fish with tarragon leaves


make them feel a little master chef by making it look pretty (not only decorating cupcakes)



 And if you are too tired for all  decorating efforts pour a comforting bowl of soup which will warm you  up. 


P.S. For those who would like to make it more festive, add pomegranate seeds on top it will make it extra colorful and tasty adding a nice sour kick.
