I love eggs. I like them fried,scrambled, boiled, baked and raw. I like how they look, the shape. I love finding two yolks in one egg. I like eggs with ham, potatoes, in soup and I'm addicted to tomatoes omelette with flat bread, but the thing that attracts me most about the eggs is the colour. The deep orange yolks remind the sun diving into the sea and the bright shiny white of the whipped whites look like clouds above it.
My daughter has a project in school which is presumptuously called "Happiness project" the idea is for kids to try doing something new and share experience with their classmates. This challenge can be applied in the kitchen, especially if you have a new book full of adventurous Spanish cuisine recipes.
Last week I decided to go for a walk at my lunch break, Mayfair is always full of hidden wonders and treasures, and one of those is the Catholic Church of Immaculate Conception. You pass the local library round the corner with the blue flag waving over it and enter the little English square, at the end of the pathway the modest and inconspicuous back door leads you into a magically Gothic and still Christmassy world of this church. And there she was St.Teresa standing quietly and observing her visitors from the height of her stand.

I will try to keep this in my mind while I cook the yolks.
I was looking at St. Teresa and remembering the 80s. The most delicious and desired dessert were the raw eggs yolks with sugar called "gogli-mogli". Yolks of Santa Teresa are the cooked version of it.
Georgia, Black sea, fresh - undoubtedly organic eggs just hatched and taken from protesting hen and an old women wearing dark, black cloths so typical for widows in Caucasus. She has resemblance with the stone statute in front of me. She vigorously whisks the eggs and says that she does not trust modern mixers, "These eggs should be whisked only by hand and with love"

10 yolks gently whisked with 125 gr sugar add squeeze of lemon (I added 2 squeezes)
and cook on low heat until mixture becomes like cottage cheese and pulls away from the sides of the pan. (Whisk and mix) Mixture should not boil.
Make balls
And into the fridge for 24 hours.
P.S. In the Internet based recipes of this dessert sugar is melted with water, however the recipe I have used is taken from the book where no water was mentioned.
